Tips for Selecting the Best Pork Chop

The cut of meat you use in this recipe does matter to produce a tender and juicy slow-cooked pork chop.

We've tried many different cuts and found the following tips to be helpful when selecting your meat:

  • A thicker bone-in chop will yield the best results when it comes to a moist dinner. However, you can use a boneless cut, but you need to reduce your cooking time to not over-cook and dry out.
  • Look for a blade chop, shoulder chop, or sirloin chop at the store. Ask the meat counter if you do not see what you want.
  • You are looking for a chop with a bit of fat and generous marbling throughout, as this will keep the meat tender and juicy as it cooks.

Tip: don't use a leaner-cut pork chop as you will not get the same tender results.

Step by Step Instructions

This pork chop recipe is easy to prep, so let's get started.

First, prep your crockpot insert with a non-stick cooking spray.

Step 1 – Add Pork Chops

Now, place your pork chops in the crockpot and top with garlic powder, thyme, salt, and pepper. Spread them out as much as possible. Don't stack them.

Step 2 – Add Soup and Ranch Seasoning

Pour the condensed soup over the pork chops, and then sprinkle the ranch seasoning mix over the top.

Note: If using corn starch, mix it with a tiny bit of water and add it after you add the condensed soup.

Step 3 – Cook

Cover with the lid and cook on low heat for 5-6 hours. You can cook the recipe on high for 3-4 hours, but we find the results are better on low.

Pork Chops can cook quickly depending on the cut you're using. Make sure to check for doneness at 4 hours when cooking on low to not overcook them.

To begin, preheat olive oil in a large frying pan over medium-high heat. Then, season the pork chops with garlic, salt, and pepper and sear each side for about 2-3 minutes.

Can You Use Frozen Pork Chops?

This topic sparks a bit of debate in crockpot land.

Some crockpot users do it and feel it's okay, but we don't recommend it for safety reasons.

Here's why. Slow cookers don't reliably get frozen meat up to a safe temperature (above 140°F) evenly enough or quickly enough. Your meat will likely spend too much time in the danger zone (from 40°F – 140°F), which opens the door for bacteria to grow. Not good!

That said, we know a lot of folks who put frozen meat in the crockpot regularly. If it's a risk you're willing to take, then go for it. Just increase the cooking time a bit.

The best way to avoid dry pork chops is to buy bone-in pork chops and cook them in a sauce to keep them juicy. Another tip is to bring the meat to room temperature before cooking. Also, try not to overcook them.

Can You Stack Pork Chops in a Slow Cooker?

You can overlap your pork chops in the slow cooker, but for even cooking, we don't recommend stacking them
